Lauki Barfi, also known as Dudhi Barfi or Bottle Gourd Barfi, is a delectable Indian sweet made from grated bottle gourd (lauki), sugar, and milk solids. It’s cooked until thickened, flavored with cardamom, and set into a firm, fudgy confection. Here’s a simple recipe to make Lauki Barfi:
Ingredients:
- 2 cups grated bottle gourd (lauki/dudhi)
- 1 cup khoya (mawa), grated or crumbled
- 1 cup sugar
- 1/2 teaspoon cardamom powder
- 2 tablespoons ghee (clarified butter)
- Chopped nuts (almonds, pistachios) for garnishing (optional)
Instructions:
- Heat a non-stick pan or heavy-bottomed kadhai over medium heat and add ghee to it.
- Add the grated bottle gourd (lauki) to the pan and sauté it for 5-7 minutes until it becomes soft and the moisture evaporates.
- Add the grated khoya (mawa) to the pan and mix well with the bottle gourd. Cook for another 5-7 minutes, stirring continuously, until the mixture thickens and starts leaving the sides of the pan.
- Add sugar to the mixture and continue to cook, stirring continuously, until the sugar melts and the mixture thickens further.
- Once the mixture reaches a barfi-like consistency and starts leaving the sides of the pan, add cardamom powder and mix well.
- Grease a plate or tray with ghee and transfer the mixture onto it. Spread it evenly using a spatula.
- Garnish the top with chopped nuts (if using), pressing them lightly into the mixture.
- Allow the mixture to cool down and set for at least 1-2 hours at room temperature.
- Once set, cut the Lauki Barfi into desired shapes, such as squares or diamonds.
- Lauki Barfi is now ready to be served. Store the remaining pieces in an airtight container at room temperature for up to a week.
