Chiroti


Chiroti is a traditional Indian dessert popular in Karnataka and Maharashtra. It is also known as Khaja in some regions. Here’s a detailed recipe for making Chiroti:

Ingredients:

  • 1 cup all-purpose flour (maida)
  • 2 tablespoons ghee (clarified butter)
  • Water (for kneading)
  • Oil (for deep frying)
  • Powdered sugar for dusting
  • Cardamom powder (optional, for flavor)

Instructions:

Dough Preparation:

  1. Take the all-purpose flour (maida) in a mixing bowl.
  2. Add 2 tablespoons of ghee to it.
  3. Rub the ghee into the flour until it resembles breadcrumbs.
  4. Gradually add water and knead the mixture into a stiff dough. The dough should be firm but pliable.

Resting the Dough:

  1. Once the dough is ready, cover it with a damp cloth and let it rest for about 30 minutes.

Rolling the Dough:

  1. After resting, divide the dough into small lemon-sized balls.
  2. Take one ball at a time and roll it into a thin, translucent disc using a rolling pin. Dust the surface and rolling pin with flour if needed to prevent sticking.

Folding Technique:

  1. Once rolled out, apply ghee all over the rolled dough.
  2. Fold the rolled dough into half. Apply ghee on the folded side.
  3. Fold it again into half. You will have a small triangle-shaped dough.

Further Folding:

  1. Apply ghee on the folded triangle.
  2. Fold one side towards the center.
  3. Fold the other side over it, so it slightly overlaps the first folded side.
  4. Apply ghee on the folded sides and press gently.

Rolling and Folding:

  1. Repeat the process for all the dough balls. Keep them covered with a damp cloth to prevent drying.

Shaping Chiroti:

  1. Take one folded dough triangle and roll it out into a thin, flat disc again.

Frying:

  1. Heat oil in a deep frying pan or kadhai on medium heat.
  2. Once the oil is hot, gently slide in the rolled-out chiroti.
  3. Fry it until it puffs up and turns golden brown on both sides. Press gently with a slotted spoon while frying to help it puff up.
  4. Once done, remove from the oil and drain excess oil by placing it on paper towels.

Serving:

  1. Let the chiroti cool down slightly.
  2. Dust them generously with powdered sugar mixed with a hint of cardamom powder for added flavor.
  3. Serve the chiroti warm or at room temperature.
