Mushroom Bonda


Mushroom Bonda is a delicious South Indian snack made by deep-frying spiced mushroom filling coated in a chickpea flour batter. Here’s a simple recipe for making Mushroom Bonda:

Ingredients:

For Mushroom Filling:

  • 200g mushrooms, finely chopped
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1-inch ginger, finely chopped
  • 2 cloves garlic, minced
  • A few curry leaves, chopped
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • 2 tablespoons oil

For Batter:

  • 1 cup chickpea flour (besan)
  • 1/4 cup rice flour
  • A pinch of baking soda
  • Salt to taste
  • Water, as needed

Other Ingredients:

  • Oil for deep frying

Instructions:

Mushroom Filling:

  1. Heat oil in a pan. Add mustard seeds and let them crackle.
  2. Add cumin seeds and chopped onions. Sauté until onions turn translucent.
  3. Add chopped ginger, garlic, and green chilies. Sauté for a minute.
  4. Add curry leaves and chopped mushrooms. Cook until mushrooms are soft and moisture evaporates.
  5. Add turmeric powder, coriander powder, garam masala powder, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and let it cool down.

Batter:

  1. In a bowl, mix chickpea flour, rice flour, baking soda, and salt.
  2. Add water gradually to make a thick batter, similar to pancake batter consistency. Ensure there are no lumps.

Making Mushroom Bonda:

  1. Heat oil in a deep pan for deep frying.
  2. Take a small portion of the mushroom filling and shape it into a small ball.
  3. Dip the ball into the batter, ensuring it is coated evenly.
  4. Carefully drop the coated ball into the hot oil. Fry on medium heat until golden brown and crispy.
  5. Remove the fried bonda from the oil using a slotted spoon and drain excess oil on a paper towel.
  6. Repeat the process with the remaining mushroom filling and batter.

Serving:

  1. Serve Mushroom Bonda hot with coconut chutney or tomato ketchup.
  2. Enjoy the crispy and flavorful snack!

This recipe makes approximately 10-12 Mushroom Bonda, depending on the size of the balls. Adjust the spices according to your taste preferences.
