​Kobi Bhaat​


Kobi Bhaat is a delicious Maharashtrian rice dish made with cabbage (kobi) and rice (bhaat), flavored with aromatic spices. Here’s a detailed recipe for Kobi Bhaat:

Ingredients:

  • 1 cup basmati rice
  • 2 cups shredded cabbage
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2-3 green chilies, slit
  • 2-3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 2 tablespoons oil or ghee
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions:

  1. Wash the rice and soak it in water for about 30 minutes. Drain and set aside.
  2. Heat oil or ghee in a pan. Add mustard seeds and let them splutter.
  3. Add cumin seeds and let them crackle.
  4. Add minced garlic and grated ginger. Sauté for a minute until fragrant.
  5. Add chopped onions and green chilies. Sauté until onions turn translucent.
  6. Add chopped tomatoes and cook until they turn soft and mushy.
  7. Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well and cook the masala for a couple of minutes.
  8. Add shredded cabbage and salt. Mix well with the masala.
  9. Cover and cook for 5-7 minutes until the cabbage is cooked but still retains its crunchiness.
  10. Add the soaked rice to the cooked cabbage mixture. Gently mix everything together.
  11. Add 2 cups of water and adjust salt if needed. Bring it to a boil.
  12. Once it starts boiling, reduce the heat to low, cover the pan, and let it cook until the rice is done and water is absorbed, about 15-20 minutes.
  13. Once done, fluff the rice gently with a fork. Garnish with fresh coriander leaves.
  14. Serve hot Kobi Bhaat with lemon wedges.
