Here’s a detailed recipe:

Ingredients:

  • 2 cups rice flour
  • 1/4 cup chana dal (split Bengal gram)
  • 2 tablespoons sesame seeds
  • 2 tablespoons grated coconut (optional)
  • 2-3 green chilies, finely chopped
  • 1 onion, finely chopped
  • 2 tablespoons chopped coriander leaves
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon ginger-garlic paste
  • Salt to taste
  • Oil for frying

Instructions:

Preparing the Batter:

  1. Wash the chana dal and soak it in water for about 2-3 hours. Drain the water afterwards.
  2. In a mixing bowl, combine rice flour, soaked chana dal, sesame seeds, grated coconut (if using), green chilies, chopped onion, coriander leaves, cumin seeds, ginger-garlic paste, and salt.
  3. Gradually add water and knead the mixture into a thick dough. The dough should be firm enough to roll but not too hard.

Making Sarvapindi:

  1. Heat a flat non-stick or cast-iron pan (tawa) on medium heat.
  2. Take a lemon-sized ball of dough and place it on a greased plastic sheet or banana leaf.
  3. Flatten the dough ball using your fingers to form a thin round pancake. Ensure that the edges are slightly thicker than the center.
  4. Poke holes in the flattened pancake with your fingers to ensure even cooking.
  5. Carefully transfer the pancake onto the heated pan. Drizzle a little oil around the edges.
  6. Cook on low to medium heat until the bottom side is golden brown and crisp.
  7. Flip the pancake and cook the other side until it turns golden brown as well.
  8. Repeat the process with the remaining dough balls.
  9. Once done, transfer the cooked Sarvapindi to a serving plate.
  10. Serve hot with chutney or pickle of your choice.

  • You can add grated vegetables like carrots, cabbage, or finely chopped spinach to the dough for variation and added nutrition.
  • Adjust the quantity of green chilies according to your spice preference.
