Vallarai Spinach Salad


Vallarai Spinach, also known as Brahmi or Indian Pennywort, is a nutritious green leafy vegetable known for its health benefits. Here’s a simple recipe for a Vallarai Spinach Salad:

Ingredients:

  • 2 cups Vallarai Spinach leaves, washed and chopped
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup carrots, grated
  • 1/4 cup bell pepper (any color), diced
  • 1/4 cup roasted peanuts or almonds
  • 1 tablespoon sesame seeds (optional)
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 1 tablespoon olive oil or any preferred salad dressing

Instructions:

  1. Prepare the Ingredients:
    • Wash the Vallarai Spinach leaves thoroughly and chop them into bite-sized pieces.
    • Dice the cucumber, slice the cherry tomatoes in half, thinly slice the red onion, grate the carrots, and dice the bell pepper.
