Maggi Magic Masala


Maggi Magic Masala is a popular seasoning blend used to enhance the flavor of various dishes, especially instant noodles like Maggi noodles. It adds a burst of flavor that elevates the taste of the dish. Here’s a simple recipe to make Maggi Magic Masala at home:

Ingredients:

  • 2 tablespoons dried onion flakes
  • 1 tablespoon dried garlic flakes
  • 1 tablespoon dried coriander leaves
  • 1 tablespoon dried mint leaves
  • 1 tablespoon dried curry leaves
  • 1 tablespoon dried fenugreek leaves (kasuri methi)
  • 1 tablespoon cumin seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon fennel seeds
  • 1 tablespoon red chili powder (adjust according to spice preference)
  • 1 tablespoon turmeric powder
  • 1 tablespoon amchur (dry mango) powder
  • 1 tablespoon salt (adjust to taste)

Instructions:

  1. Prepare the Ingredients:
    • If your onion and garlic are not already dried, you can do so by placing them in a preheated oven at 200°F (93°C) for about 30 minutes or until they are thoroughly dried.
    • Crush the dried onion and garlic flakes into smaller pieces if they are too large.
    • If you’re using fresh coriander, mint, and curry leaves, you’ll need to dry them thoroughly using a dehydrator or by air-drying them in a well-ventilated area until completely dried.
  2. Toast the Spices:
    • In a dry skillet over medium heat, toast the cumin seeds, black peppercorns, and fennel seeds until they become fragrant, about 1-2 minutes. Stir frequently to prevent burning.
  3. Grind the Spices:
    • Once toasted, allow the spices to cool slightly before grinding them into a fine powder using a spice grinder or mortar and pestle.
  4. Combine Ingredients:
    • In a mixing bowl, combine the ground spices with the dried onion flakes, garlic flakes, coriander leaves, mint leaves, curry leaves, fenugreek leaves, red chili powder, turmeric powder, amchur powder, and salt.
    • Mix well until all the ingredients are evenly distributed.
  5. Store:
    • Transfer the Maggi Magic Masala to an airtight container or a spice jar with a tight-fitting lid.
    • Store it in a cool, dry place away from direct sunlight. Properly stored, it should last for several months.

Usage:

  • Sprinkle a teaspoon or as desired of Maggi Magic Masala over cooked Maggi noodles or any other dish like soups, salads, or sandwiches for added flavor.
