Ingredients:
- 2 tablespoons dried onion flakes

- 1 tablespoon amchur (dry mango) powder

Instructions:
- Prepare the Ingredients:
- If your onion and garlic are not already dried, you can do so by placing them in a preheated oven at 200°F (93°C) for about 30 minutes or until they are thoroughly dried.
- Crush the dried onion and garlic flakes into smaller pieces if they are too large.
- If you’re using fresh coriander, mint, and curry leaves, you’ll need to dry them thoroughly using a dehydrator or by air-drying them in a well-ventilated area until completely dried.
- Toast the Spices:
- In a dry skillet over medium heat, toast the cumin seeds, black peppercorns, and fennel seeds until they become fragrant, about 1-2 minutes. Stir frequently to prevent burning.
- Grind the Spices:
- Once toasted, allow the spices to cool slightly before grinding them into a fine powder using a spice grinder or mortar and pestle.
- Combine Ingredients:
- In a mixing bowl, combine the ground spices with the dried onion flakes, garlic flakes, coriander leaves, mint leaves, curry leaves, fenugreek leaves, red chili powder, turmeric powder, amchur powder, and salt.
