Dahi Bhindi​


Dahi Bhindi, or Okra in Yogurt Sauce, is a delicious Indian dish that combines the unique flavor of okra with creamy yogurt and aromatic spices. Here’s a detailed recipe for you:

Ingredients:

  • 250 grams okra (bhindi), washed and dried
  • 1 cup plain yogurt (curd), whisked until smooth
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, slit lengthwise
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnishing

Instructions:

  1. Prepare the Okra:
    • Trim the ends of the okra and slit them lengthwise without cutting through completely. This helps to cook the okra evenly.
    • Heat 1 tablespoon of oil in a pan over medium heat. Add the okra and sauté until they are cooked and slightly crispy. Set aside.
  2. Prepare the Yogurt Mixture:
    • In a bowl, whisk the yogurt until it is smooth and creamy. Keep aside.
  3. Cooking the Masala:
    • Heat the remaining oil in the same pan. Add cumin seeds and let them splutter.
    • Add chopped onions and green chilies. Sauté until the onions turn translucent.
    • Add ginger-garlic paste and sauté until the raw smell disappears.
    • Add chopped tomatoes and cook until they become mushy and the oil separates from the masala.
  4. Adding Spices:
    • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another minute.
  5. Combine Okra and Yogurt:
    • Add the sautéed okra to the masala mixture. Mix gently to coat the okra with the spices.
    • Reduce the heat to low and pour the whisked yogurt into the pan. Stir continuously to prevent the yogurt from curdling.
    • Let the mixture simmer for 5-7 minutes on low heat until the flavors meld together and the sauce thickens slightly.
  6. Finishing Touches:
    • Sprinkle garam masala over the Dahi Bhindi and mix well.
    • Garnish with fresh coriander leaves.
  7. Serving:
    • Serve hot with roti, naan, or rice.
