Paneer Paratha

Paneer Paratha is a delicious Indian flatbread stuffed with a flavorful mixture of paneer (Indian cottage cheese) and spices. Here’s a detailed recipe to make Paneer Paratha:

Ingredients:

For the Dough:

  • 2 cups whole wheat flour (atta)
  • Water (as needed)
  • Salt to taste
  • 2 tablespoons oil or ghee

For the Paneer Filling:

  • 200 grams paneer, grated or crumbled
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon ginger, grated
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Chopped coriander leaves (optional)
  • Oil or ghee for cooking

Instructions:

Making the Dough:

  1. Prepare the Dough:
    • In a mixing bowl, combine the whole wheat flour, salt, and 2 tablespoons of oil or ghee. Gradually add water and knead into a smooth dough. Let it rest for about 15-20 minutes, covered with a damp cloth.

Making the Paneer Filling:

  1. Preparing the Paneer Mixture:
    • In a bowl, mix the grated or crumbled paneer, finely chopped onions, green chilies, grated ginger, coriander powder, cumin powder, garam masala, red chili powder, salt, and chopped coriander leaves (if using). Mix everything well to form the stuffing.

Assembling and Cooking the Parathas:

  1. Dividing the Dough:
    • Divide the rested dough into equal-sized balls. Roll them between your palms to make them smooth.
  2. Rolling Out the Parathas:
    • Take one dough ball, dust it in flour, and roll it out into a small circle, around 4-5 inches in diameter.
  3. Filling and Folding:
    • Place a portion of the prepared paneer filling in the center of the rolled-out dough.
    • Gather the edges of the dough and seal them together, ensuring the filling is enclosed properly. Flatten the stuffed ball gently.
  4. Rolling Again:
    • Dust the stuffed ball with flour and gently roll it out into a paratha, around 6-7 inches in diameter. Take care not to let the filling come out.
  5. Cooking the Parathas:
    • Heat a tawa or griddle on medium heat. Place the rolled-out paratha on the heated tawa.
    • Cook one side until you see bubbles forming. Flip it over and cook the other side.
    • Spread a little oil or ghee on both sides, pressing gently with a spatula, until golden brown spots appear.
  6. Repeat for Remaining Dough:
    • Follow the same process for the remaining dough balls, stuffing, rolling, and cooking them into parathas.
  7. Serve Hot:
    • Serve the hot and flavorful Paneer Parathas with butter, pickle, or any curry of your choice.
