Khichu

Khichu is a traditional Gujarati snack made from rice flour and spices. It’s a simple yet flavorful dish that is enjoyed as a snack or light meal. Here’s a detailed recipe for Khichu:

Ingredients:

  • 1 cup rice flour
  • 2 cups water
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon sesame seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Fresh coriander leaves, finely chopped, for garnish
  • Grated coconut (optional), for garnish
  • Green chilies, finely chopped (optional), for garnish

Instructions:

  1. In a mixing bowl, combine rice flour, turmeric powder, red chili powder, and salt. Mix well to combine all the dry ingredients.
  2. In a saucepan, bring water to a boil. Once the water is boiling, reduce the heat to low and gradually add the rice flour mixture while stirring continuously to prevent lumps from forming.
  3. Keep stirring the mixture over low heat until it thickens and starts to come together. This should take about 5-7 minutes. The consistency should be similar to that of a thick dough.
  4. Once the mixture has thickened, remove it from the heat and transfer it to a clean surface or a large mixing bowl.
  5. While the mixture is still hot, knead it well with greased hands to ensure a smooth texture. This step is crucial for a soft and smooth khichu.
  6. In a small pan, heat oil over medium heat. Add cumin seeds and sesame seeds and sauté until they start to splutter and release their aroma.
  7. Pour the seasoned oil over the kneaded khichu mixture and mix well to incorporate the flavors.
  8. Divide the khichu mixture into small portions and shape them into round balls or cylindrical shapes.
  9. Serve the khichu hot, garnished with finely chopped coriander leaves, grated coconut, and green chilies, if desired.

Enjoy your delicious and comforting Gujarati Khichu as a snack or light meal!
