Marwari Kadhi


Marwari Kadhi is a traditional Rajasthani dish that is a variation of the popular Indian dish, kadhi. It’s a yogurt-based curry typically served with rice or roti. Marwari Kadhi has a distinct flavor profile and is often spicier compared to kadhi from other regions. Here’s a basic recipe for Marwari Kadhi:

Ingredients:

  • 1 cup yogurt (whisked)
  • 2 tablespoons besan (gram flour)
  • 2 cups water
  • 1 tablespoon ghee or oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1-2 dried red chilies
  • A pinch of asafoetida (hing)
  • 8-10 curry leaves
  • 1 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • Salt to taste
  • Chopped cilantro leaves for garnish

Instructions:

  1. In a mixing bowl, whisk together yogurt and besan until smooth. Add water gradually to form a lump-free mixture.
  2. Heat ghee or oil in a pan over medium heat. Add mustard seeds and let them splutter.
  3. Add cumin seeds, dried red chilies, asafoetida, and curry leaves. Sauté for a few seconds until fragrant.
  4. Lower the heat and slowly pour the yogurt-besan mixture into the pan, stirring continuously to prevent lumps.
  5. Add turmeric powder, coriander powder, and salt. Mix well.
  6. Cook the kadhi on low heat, stirring occasionally, until it thickens slightly and raw flavor of besan disappears. This usually takes about 15-20 minutes.
  7. Once done, remove from heat and garnish with chopped cilantro leaves.
  8. Serve hot with steamed rice or roti.

You can adjust the consistency of the kadhi by adding more or less water according to your preference. Additionally, you can add vegetables like okra, potatoes, or onions to enhance the flavor and texture of the dish. Enjoy your Marwari Kadhi!
