Paneer Sandwich Dhokla


Sandwich Dhokla is a delicious and savory Indian snack that combines the flavors of traditional dhokla with a unique sandwich-like presentation. Here’s a detailed recipe for making Sandwich Dhokla:

Ingredients:

For Dhokla Batter:

  • 1 cup besan (gram flour)
  • 1/2 cup suji (semolina)
  • 1/4 cup yogurt
  • 1 teaspoon ginger-green chili paste
  • Salt to taste
  • 1 teaspoon sugar
  • 1 teaspoon fruit salt (eno)
  • Water as needed

For Sandwich Filling:

  • Crumbled Paneer 150 gms.
  • 1 finely chopped onion.
  • 1 finely chopped tomato
  • 1 finely chopped cucumber
  • Salt to taste
  • Black pepper powder to taste
  • Chaat masala to taste
  • Green chutney (optional)
  • Tamarind chutney (optional)

For Tempering:

  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • Few curry leaves
  • A pinch of asafoetida (hing)

Instructions:

  1. Prepare Dhokla Batter:
    • In a mixing bowl, combine besan, suji, yogurt, ginger-green chili paste, salt, and sugar.
    • Gradually add water to form a smooth batter of pouring consistency. Ensure there are no lumps.
    • Let the batter rest for 10-15 minutes.
  2. Prepare Dhokla:
    • Grease a flat microwave-safe dish or a dhokla plate with oil.
    • Just before steaming, add fruit salt (eno) to the batter and mix gently. You will notice the batter becoming frothy.
    • Immediately pour the batter into the greased dish and spread it evenly.
    • Steam the batter for 10-12 minutes until a toothpick inserted into the dhokla comes out clean.
    • Once done, remove the dhokla from the steamer and let it cool down for a few minutes.
  3. Prepare Filling:
    • In a bowl, mix together Paneer, chopped onion, tomato, and cucumber.
    • Season the mixture with salt, black pepper powder, and chaat masala. You can also add a spoonful of green chutney and tamarind chutney for extra flavor.
  4. Assemble Sandwich Dhokla:
    • Once the dhokla has cooled down, carefully cut it into two equal halves horizontally, creating two layers.
    • Place one layer of dhokla on a serving plate.
    • Spread the prepared filling evenly over the dhokla layer.
    • Place the second layer of dhokla over the filling, creating a sandwich.
  5. Prepare Tempering:
    • Heat oil in a small pan.
    • Add mustard seeds and let them crackle.
    • Add sesame seeds, curry leaves, and a pinch of asafoetida. Fry for a few seconds.
    • Pour this tempering over the assembled Sandwich Dhokla.
  6. Serve:
    • Cut the Sandwich Dhokla into desired shapes, like squares or triangles.
    • Serve warm with extra chutneys or a side of green chilies.
