Girda


Girda, also known as Girda Roti, is a type of traditional bread popular in Kashmiri cuisine. It’s a round, slightly leavened bread with a chewy texture and is typically enjoyed with various Kashmiri dishes like Rogan Josh or Kabargah. Here’s a simple recipe to make Girda at home:

Ingredients:

  • 2 cups whole wheat flour (atta)
  • 1 teaspoon active dry yeast
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • Warm water, as needed
  • Ghee or butter, for brushing (optional)

Instructions:

  1. In a small bowl, dissolve the sugar in a little warm water. Sprinkle the yeast over the water and let it sit for about 5-10 minutes, or until foamy.
  2. In a large mixing bowl, combine the whole wheat flour and salt. Make a well in the center and pour in the activated yeast mixture.
  3. Gradually add warm water to the flour mixture, a little at a time, and knead until you have a soft and slightly sticky dough. You may not need to use all the water, so add it gradually.
  4. Once the dough comes together, transfer it to a clean, lightly floured surface and knead it for about 5-7 minutes, or until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
  6. Preheat your oven to 425°F (220°C). If you’re using a tandoor or clay oven, preheat it accordingly.
  7. Punch down the risen dough and divide it into equal-sized portions. Shape each portion into a smooth ball and place them on a baking sheet lined with parchment paper, leaving some space between each ball.
  8. Flatten each ball slightly to form a disc shape, about 1/2 inch thick.
  9. Bake the Girda in the preheated oven for 10-15 minutes, or until they are golden brown and cooked through. If you’re using a tandoor or clay oven, cook the Girda on the walls of the oven until they are puffed up and cooked.
  10. Once done, remove the Girda from the oven and brush them with ghee or butter, if desired.
  11. Serve the Girda warm with your favorite Kashmiri dishes or enjoy them on their own.
