Lauki Barfi

Lauki Barfi, also known as Dudhi Barfi or Bottle Gourd Barfi, is a delectable Indian sweet made from grated bottle gourd (lauki), sugar, and milk solids. It’s cooked until thickened, flavored with cardamom, and set into a firm, fudgy confection. Garnished with chopped nuts, this sweet treat is enjoyed during festivals and special occasions in Indian households.


Here’s a simple recipe to make Lauki Barfi:

Ingredients:

  • 2 cups grated bottle gourd (lauki/dudhi)
  • 1 cup khoya (mawa), grated or crumbled
  • 1 cup sugar
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons ghee (clarified butter)
  • Chopped nuts (almonds, pistachios) for garnishing (optional)

Instructions:

  1. Heat a non-stick pan or heavy-bottomed kadhai over medium heat and add ghee to it.
  2. Add the grated bottle gourd (lauki) to the pan and sauté it for 5-7 minutes until it becomes soft and the moisture evaporates.
  3. Add the grated khoya (mawa) to the pan and mix well with the bottle gourd. Cook for another 5-7 minutes, stirring continuously, until the mixture thickens and starts leaving the sides of the pan.
  4. Add sugar to the mixture and continue to cook, stirring continuously, until the sugar melts and the mixture thickens further.
  5. Once the mixture reaches a barfi-like consistency and starts leaving the sides of the pan, add cardamom powder and mix well.
  6. Grease a plate or tray with ghee and transfer the mixture onto it. Spread it evenly using a spatula.
  7. Garnish the top with chopped nuts (if using), pressing them lightly into the mixture.
  8. Allow the mixture to cool down and set for at least 1-2 hours at room temperature.
  9. Once set, cut the Lauki Barfi into desired shapes, such as squares or diamonds.
  10. Lauki Barfi is now ready to be served. Store the remaining pieces in an airtight container at room temperature for up to a week.
