Biryani Masala Powder

Ingredients:

  • 2 tablespoons cumin seeds
  • 2 tablespoons coriander seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon fennel seeds
  • 2-inch cinnamon stick
  • 4-5 green cardamom pods
  • 3-4 black cardamom pods
  • 6-8 cloves
  • 2-3 dried bay leaves
  • 1 nutmeg, grated (or 1 tablespoon pre-ground nutmeg)
  • 1 tablespoon mace (optional)
  • 2-3 dried red chilies (adjust to taste)
  • 1 teaspoon turmeric powder

Instructions:

  1. Dry Roasting Spices:
    • Heat a heavy-bottomed pan or skillet over medium heat.
    • Add cumin seeds, coriander seeds, black peppercorns, fennel seeds, cinnamon stick, green cardamom pods, black cardamom pods, cloves, dried bay leaves, and dried red chilies to the pan.
    • Dry roast the spices for 2-3 minutes, stirring frequently, until they become fragrant. Be careful not to burn them.
    • Remove from heat and transfer the roasted spices to a plate to cool.
  2. Grinding Spices:
    • Once the roasted spices have cooled down, transfer them to a spice grinder or a mortar and pestle.
    • Grind the spices to a fine powder. If using a mortar and pestle, you may need to work in batches.
    • Once ground, sift the mixture to remove any large or coarse pieces.
  3. Adding Nutmeg and Turmeric:
    • Grate the nutmeg into the spice mixture. If using pre-ground nutmeg, add it to the mixture.
    • Add turmeric powder to the spice mixture.
  4. Mixing and Storing:
    • Mix all the ground spices thoroughly to ensure even distribution of flavors.
    • Store the biryani masala powder in an airtight container in a cool, dry place away from sunlight.
    • Use as needed in your biryani recipes.
