Green Chilli Thokku Pickle

Green Chilli Thokku Pickle is a fiery and tangy South Indian condiment made from fresh green chillies cooked with spices like mustard seeds, fenugreek seeds, and tamarind paste. It’s typically enjoyed as a spicy accompaniment to dosa, idli, rice, or used as a flavorful spread for sandwiches and wraps.

Here’s a simple recipe for you:

Ingredients:

  • 250 grams fresh green chillies
  • 2 tablespoons sesame oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds
  • 1/4 teaspoon asafoetida (hing)
  • 1 teaspoon turmeric powder
  • 2 tablespoons tamarind paste
  • Salt to taste

Instructions:

  1. Prepare the Chillies:
    • Wash the green chillies thoroughly and pat them dry. Remove the stems and slit them lengthwise. If you prefer less spicy pickle, remove the seeds.
  2. Cook the Chillies:
    • Heat a pan and add the sesame oil. Once the oil is hot, add mustard seeds and let them splutter.
    • Add fenugreek seeds and asafoetida. Sauté for a few seconds.
    • Add the slit green chillies and turmeric powder. Cook on medium heat for 5-7 minutes until the chillies are slightly soft.
  3. Make the Thokku:
    • Add tamarind paste and salt to the cooked chillies. Mix well.
    • Cook for another 5-7 minutes until the mixture thickens and the oil starts to separate. Stir occasionally to prevent sticking.
  4. Cool and Store:
    • Let the thokku cool down completely.
    • Store it in a clean, dry glass jar. It can be stored at room temperature for up to a month.
