​Mint rice


Mint rice is a flavorful and aromatic South Indian dish made with rice and fresh mint leaves. Here’s a simple recipe:

Ingredients:

  • 1 cup basmati rice (or any long-grain rice)
  • 1 cup fresh mint leaves, washed and finely chopped
  • 1 onion, finely chopped
  • 2 green chilies, slit lengthwise
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons cooking oil or ghee
  • 2 cups water
  • Fresh coriander leaves for garnish (optional)
  • Lemon wedges for serving (optional)

Instructions:

  1. Cook the Rice:
    • Wash the rice under cold water until the water runs clear.
    • In a pot, bring 2 cups of water to a boil. Add the washed rice and a pinch of salt. Cook until the rice is tender but not mushy. Once cooked, drain any excess water and set aside.
  2. Prepare the Mint Paste:
    • In a blender or food processor, blend the chopped mint leaves into a smooth paste. You can add a little water if needed to aid in blending.
  3. Make the Mint Rice:
    • Heat oil or ghee in a pan over medium heat. Add mustard seeds and let them splutter.
    • Add cumin seeds and sauté for a few seconds until fragrant.
    • Add chopped onion and green chilies. Sauté until the onions turn translucent.
    • Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
    • Add turmeric powder and salt. Mix well.
    • Add the mint paste and cook for 3-4 minutes until the raw smell of mint disappears and the mixture thickens slightly.
  4. Mix with Rice:
    • Add the cooked rice to the mint mixture. Gently toss until the rice is evenly coated with the mint mixture.
  5. Garnish and Serve:
    • Garnish with fresh coriander leaves if desired.
    • Serve hot with a squeeze of lemon juice on top, if you like.

Serving Suggestions:

  • Mint rice pairs well with yogurt, raita, or any curry of your choice.
  • It can also be served with papad or pickle on the side for added flavor.
