Ingredients:
- 1 cup basmati rice (or any long-grain rice)
- 1 cup fresh mint leaves, washed and finely chopped
- 1 onion, finely chopped
- 2 green chilies, slit lengthwise
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons cooking oil or ghee
- 2 cups water
- Fresh coriander leaves for garnish (optional)
- Lemon wedges for serving (optional)
Instructions:
- Cook the Rice:
- Wash the rice under cold water until the water runs clear.
- In a pot, bring 2 cups of water to a boil. Add the washed rice and a pinch of salt. Cook until the rice is tender but not mushy. Once cooked, drain any excess water and set aside.
- Prepare the Mint Paste:
- In a blender or food processor, blend the chopped mint leaves into a smooth paste. You can add a little water if needed to aid in blending.
- Make the Mint Rice:
- Heat oil or ghee in a pan over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds and sauté for a few seconds until fragrant.
- Add chopped onion and green chilies. Sauté until the onions turn translucent.
- Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add turmeric powder and salt. Mix well.
- Add the mint paste and cook for 3-4 minutes until the raw smell of mint disappears and the mixture thickens slightly.
- Mix with Rice:
- Add the cooked rice to the mint mixture. Gently toss until the rice is evenly coated with the mint mixture.
- Garnish and Serve:
- Garnish with fresh coriander leaves if desired.
- Serve hot with a squeeze of lemon juice on top, if you like.
