    • Remove from heat and transfer the roasted spices to a plate to cool.
  2. Adding Other Ingredients:
    • Once the roasted spices have cooled down, transfer them to a spice grinder or a mortar and pestle.
    • Grind the spices to a fine powder. If using a mortar and pestle, you may need to work in batches.
    • Once ground, sift the mixture to remove any large or coarse pieces.
    • Add turmeric powder, asafoetida (hing), and curry leaves to the ground spice mixture.
