Sattu Paratha is a traditional Indian flatbread made with sattu, a flour made from roasted chickpeas. Here’s a simple recipe:
Ingredients:
- 2 cups whole wheat flour (atta)
- 1 cup sattu (roasted chickpea flour)
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 2 tablespoons coriander leaves, chopped
- 1 teaspoon ginger paste
- 1/2 teaspoon ajwain (carom seeds)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- Ghee or oil for cooking
- Water as needed
Instructions:
1. Prepare the Dough:
- In a mixing bowl, combine whole wheat flour, sattu, chopped onion, green chilies, coriander leaves, ginger paste, ajwain, turmeric powder, red chili powder, and salt.
- Knead the mixture into a firm dough by adding water gradually. The dough should be smooth and pliable. Cover and let it rest for 15-20 minutes.
2. Make Parathas:
- Divide the dough into equal-sized balls. Take one ball and roll it out into a small disc using a rolling pin and some dry flour.
- Place about 2 tablespoons of the sattu mixture in the center of the rolled-out dough.
- Bring the edges together and seal the filling inside. Flatten the stuffed ball gently.
- Roll out the stuffed ball into a paratha, using a rolling pin and some dry flour to prevent sticking.
3. Cook the Parathas:
- Heat a griddle or tawa over medium-high heat.
- Place the rolled-out paratha on the hot griddle. Cook for about a minute until you see bubbles forming.
- Flip the paratha and spread some ghee or oil on the surface.
- Cook until both sides are golden brown, pressing gently with a spatula to ensure even cooking.
- Repeat the process with the remaining dough balls.
4. Serve:
- Serve hot Sattu Parathas with yogurt, pickle, or any chutney of your choice.
- Enjoy the flavorful and nutritious Sattu Parathas as a breakfast or a wholesome meal.
Tips:
- You can adjust the spice levels according to your preference by increasing or decreasing the amount of green chilies and red chili powder.
- Add a dash of lemon juice to the sattu filling for a tangy flavor.
- Serve with a side of yogurt or raita to balance the flavors.
