Sattu Paratha


Sattu Paratha
is a traditional Indian flatbread made with sattu, a flour made from roasted chickpeas. Here’s a simple recipe:

Ingredients:

  • 2 cups whole wheat flour (atta)
  • 1 cup sattu (roasted chickpea flour)
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 2 tablespoons coriander leaves, chopped
  • 1 teaspoon ginger paste
  • 1/2 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Ghee or oil for cooking
  • Water as needed

Instructions:

1. Prepare the Dough:

  1. In a mixing bowl, combine whole wheat flour, sattu, chopped onion, green chilies, coriander leaves, ginger paste, ajwain, turmeric powder, red chili powder, and salt.
  2. Knead the mixture into a firm dough by adding water gradually. The dough should be smooth and pliable. Cover and let it rest for 15-20 minutes.

2. Make Parathas:

  1. Divide the dough into equal-sized balls. Take one ball and roll it out into a small disc using a rolling pin and some dry flour.
  2. Place about 2 tablespoons of the sattu mixture in the center of the rolled-out dough.
  3. Bring the edges together and seal the filling inside. Flatten the stuffed ball gently.
  4. Roll out the stuffed ball into a paratha, using a rolling pin and some dry flour to prevent sticking.

3. Cook the Parathas:

  1. Heat a griddle or tawa over medium-high heat.
  2. Place the rolled-out paratha on the hot griddle. Cook for about a minute until you see bubbles forming.
  3. Flip the paratha and spread some ghee or oil on the surface.
  4. Cook until both sides are golden brown, pressing gently with a spatula to ensure even cooking.
  5. Repeat the process with the remaining dough balls.

4. Serve:

  1. Serve hot Sattu Parathas with yogurt, pickle, or any chutney of your choice.
  2. Enjoy the flavorful and nutritious Sattu Parathas as a breakfast or a wholesome meal.

Tips:

  • You can adjust the spice levels according to your preference by increasing or decreasing the amount of green chilies and red chili powder.
  • Add a dash of lemon juice to the sattu filling for a tangy flavor.
  • Serve with a side of yogurt or raita to balance the flavors.
