Mutton Malai Curry

Mutton Malai Curry is a creamy and mildly spiced dish that combines tender mutton pieces with a rich and luxurious gravy made with cream, coconut, and spices. Here’s how to make it:

Ingredients:

  • 500 grams mutton, cut into pieces
  • 1 cup onion, finely chopped
  • 1 cup tomatoes, finely chopped
  • 1/2 cup coconut milk
  • 1/2 cup fresh cream
  • 2 tablespoons ginger-garlic paste
  • 2 green chilies, slit lengthwise
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon cardamom powder
  • Salt to taste
  • 2 tablespoons ghee or oil
  • Fresh coriander leaves for garnish

Instructions:

Marinating the Mutton:

  1. In a bowl, marinate the mutton pieces with ginger-garlic paste, red chili powder, coriander powder, cumin powder, garam masala powder, cardamom powder, and salt. Let it marinate for at least 30 minutes.

Cooking the Mutton:

  1. Heat ghee or oil in a deep pan or pressure cooker.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add the marinated mutton pieces and cook until they are browned on all sides.
  4. Add chopped tomatoes and green chilies. Cook until the tomatoes are soft and the oil starts to separate.
  5. If using a pressure cooker, add a little water (about 1/4 cup) and pressure cook the mutton until it is tender. If using a pan, cover and cook on low heat until the mutton is tender, adding water if necessary.
  6. Once the mutton is cooked, add coconut milk and fresh cream. Mix well and simmer for 5-10 minutes, allowing the flavors to blend together.

Finishing Touches:

  1. Adjust the seasoning according to your taste.
  2. Garnish with fresh coriander leaves.

Serving:

  1. Serve hot with naan, roti, or steamed rice.

Tips:

  • Be careful not to overcook the mutton, as it can become tough.
  • Adjust the spice levels according to your preference.
  • You can add more coconut milk or cream if you prefer a richer gravy.
  • For a smoother gravy, you can blend the onion-tomato mixture before adding the mutton.
  • Mutton Malai Curry tastes even better the next day as the flavors develop more, so it’s a great dish to prepare in advance.
