Tandoori Gobhi is a delicious Indian dish where cauliflower (gobhi) is marinated in a spiced yogurt mixture and then roasted in a tandoor or oven until tender and charred. Here’s a simple recipe for making Tandoori Gobhi:
Ingredients:
- 1 medium-sized cauliflower, cut into florets
- 1 cup plain yogurt
- 2 tablespoons tandoori masala
- 1 tablespoon ginger-garlic paste
- 1 tablespoon lemon juice
- 1 teaspoon Kashmiri red chili powder (for color)
- 1 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil
- Chopped cilantro and lemon wedges for garnish
Instructions:
- Preparation:
- Wash and cut the cauliflower into medium-sized florets.
- In a bowl, mix yogurt, tandoori masala, ginger-garlic paste, lemon juice, red chili powder, turmeric powder, salt, and oil to make the marinade.
- Coat the cauliflower florets evenly with the marinade. Let them marinate for at least 30 minutes, or you can refrigerate them for a couple of hours for better flavor.
- Cooking:
- Preheat your oven to 200°C (400°F). If you have a grill or tandoor, preheat that instead.
- Thread the marinated cauliflower florets onto skewers. If you’re using an oven, place them on a baking tray lined with aluminum foil.
- Roast the cauliflower in the preheated oven for about 25-30 minutes or until they are tender and slightly charred. If using a grill or tandoor, cook until the same result is achieved, turning occasionally to cook evenly.
- Serving:
- Once cooked, remove the cauliflower from the skewers if using, and arrange them on a serving platter.
- Garnish with chopped cilantro and lemon wedges.
- Serve hot with mint chutney or yogurt sauce.
Tandoori Gobhi makes a fantastic appetizer or side dish in any Indian meal. Enjoy!
