Mutton Malai Curry is a creamy and mildly spiced dish that combines tender mutton pieces with a rich and luxurious gravy made with cream, coconut, and spices. Here’s how to make it:
Ingredients:
- 500 grams mutton, cut into pieces
- 1 cup onion, finely chopped
- 1 cup tomatoes, finely chopped
- 1/2 cup coconut milk
- 1/2 cup fresh cream
- 2 tablespoons ginger-garlic paste
- 2 green chilies, slit lengthwise
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala powder
- 1/4 teaspoon cardamom powder
- Salt to taste
- 2 tablespoons ghee or oil
- Fresh coriander leaves for garnish
Instructions:
Marinating the Mutton:
- In a bowl, marinate the mutton pieces with ginger-garlic paste, red chili powder, coriander powder, cumin powder, garam masala powder, cardamom powder, and salt. Let it marinate for at least 30 minutes.
Cooking the Mutton:
- Heat ghee or oil in a deep pan or pressure cooker.
- Add chopped onions and sauté until they turn golden brown.
- Add the marinated mutton pieces and cook until they are browned on all sides.
- Add chopped tomatoes and green chilies. Cook until the tomatoes are soft and the oil starts to separate.
- If using a pressure cooker, add a little water (about 1/4 cup) and pressure cook the mutton until it is tender. If using a pan, cover and cook on low heat until the mutton is tender, adding water if necessary.
- Once the mutton is cooked, add coconut milk and fresh cream. Mix well and simmer for 5-10 minutes, allowing the flavors to blend together.
Finishing Touches:
- Adjust the seasoning according to your taste.
- Garnish with fresh coriander leaves.
Serving:
- Serve hot with naan, roti, or steamed rice.
Tips:
- Be careful not to overcook the mutton, as it can become tough.
- Adjust the spice levels according to your preference.
- You can add more coconut milk or cream if you prefer a richer gravy.
- For a smoother gravy, you can blend the onion-tomato mixture before adding the mutton.
- Mutton Malai Curry tastes even better the next day as the flavors develop more, so it’s a great dish to prepare in advance.
