Peanut and Paneer Rice

Peanut and Paneer Rice is a flavorful and wholesome dish that combines the nuttiness of peanuts with the creamy texture of paneer (cottage cheese). This dish features aromatic basmati rice cooked with a medley of spices, including turmeric, red chili, and coriander, creating a deliciously spiced base. Here’s a simple recipe for Peanut and Paneer Rice:

Ingredients:

  • 1 cup basmati rice
  • 1 cup paneer (cottage cheese), cubed
  • 1/2 cup peanuts, roasted
  • 1 large onion, finely chopped
  • 1 large tomato, finely chopped
  • 1/2 cup frozen peas (optional)
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the Rice:
    • Wash the basmati rice thoroughly under running water until the water runs clear.
    • Soak the rice in water for about 30 minutes.
    • In a large pot, bring water to a boil.
    • Add the soaked and drained rice to the boiling water and cook until the rice is 70-80% cooked (it should still have a slight bite to it). Drain the water and set aside.
  2. Cooking the Paneer:
    • In a large pan, heat 1 tablespoon of oil or ghee over medium heat.
    • Add the paneer cubes and sauté until they turn golden brown on all sides. Remove the paneer from the pan and set aside.
  3. Prepare the Peanut and Paneer Masala:
    • In the same pan, add the remaining oil or ghee.
    • Add cumin seeds and let them splutter.
    • Add chopped onions and sauté until they become golden brown.
    • Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
    • Add chopped tomatoes and cook until they become soft and the oil starts to separate.
    • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
  4. Combine Ingredients:
    • Add the roasted peanuts, cooked paneer, and frozen peas (if using) to the masala. Mix well.
  5. Add Rice:
    • Gently add the partially cooked rice to the pan. Mix everything together, taking care not to break the rice grains.
    • Cook on low heat, covered, for another 10-15 minutes until the rice is fully cooked and flavors are well absorbed.
  6. Garnish and Serve:
    • Garnish with fresh coriander leaves.
    • Serve the Peanut and Paneer Rice hot with raita or a side salad.
