​Sattu ka Cheela


Sattu ka cheela is a savory pancake made from sattu flour, which is roasted chickpea flour. It’s a popular breakfast or snack item in many parts of India, especially in Bihar and Uttar Pradesh. Here’s a simple recipe to make it:

Ingredients:

  • 1 cup sattu flour
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 2 tablespoons chopped coriander leaves
  • 1/2 teaspoon ginger, grated
  • 1/4 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Water, as needed
  • Oil or ghee, for cooking

Instructions:

  1. Prepare the batter:
    • In a mixing bowl, add sattu flour, chopped onion, green chili, coriander leaves, grated ginger, ajwain, cumin powder, turmeric powder, and salt.
  2. Mix well:
    • Gradually add water to the mixture while stirring continuously to make a smooth batter. The batter should have a pouring consistency.
  3. Let it rest:
    • Let the batter rest for about 10-15 minutes to allow the flavors to meld.
  4. Heat the skillet:
    • Heat a non-stick skillet or tawa over medium heat.
  5. Make cheelas:
    • Once the skillet is hot, pour a ladleful of batter onto the center of the skillet and spread it into a thin circle using the back of the ladle.
  6. Drizzle oil:
    • Drizzle a little oil or ghee around the edges of the cheela and a few drops on top.
  7. Cook until golden:
    • Cook the cheela for 2-3 minutes on medium heat until the bottom side is golden brown and crispy.
  8. Flip and cook:
    • Carefully flip the cheela using a spatula and cook the other side until golden brown.
  9. Repeat:
    • Repeat the process with the remaining batter, adding more oil to the skillet as needed.
  10. Serve:
    • Serve the sattu ka cheela hot with chutney, yogurt, or pickle of your choice.

  • You can customize the filling by adding chopped spinach, grated carrots, or any other vegetables of your choice.
  • Adjust the spiciness by adding more or fewer green chilies.
