Khurchan Peda


Khurchan Peda is a delightful Indian sweet that combines the richness of khurchan (scraped milk solids) with the sweetness of peda (a traditional Indian sweet made from condensed milk and sugar). Here’s a recipe to make Khurchan Peda:

Ingredients:

  • 2 cups full-fat milk
  • 1/4 cup sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon ghee (clarified butter)
  • Pistachios or almonds for garnish (optional)

Instructions:

  1. Prepare the Milk Solids (Khurchan):
    • Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat.
    • Once the milk starts boiling, reduce the heat to low and let it simmer, stirring occasionally to prevent sticking.
    • As the milk reduces and thickens, gently scrape the cream that forms on the sides and add it back to the milk.
    • Continue simmering and scraping until the milk reduces to about one-third of its original volume and turns into thick khoya (milk solids). This process may take around 45 minutes to an hour. The khurchan should be browned and have a caramelized flavor. Be careful not to let it burn.
  2. Make the Peda:
    • Once the khurchan is ready, add sugar and cardamom powder to it. Mix well until the sugar dissolves completely.
    • Add ghee to the mixture and stir continuously over low heat until the mixture comes together and leaves the sides of the pan. It will start to resemble a thick dough-like consistency.
  3. Shape the Peda:
    • Turn off the heat and let the mixture cool slightly.
    • Grease your palms with a little ghee and take small portions of the mixture to roll into smooth balls. Flatten them slightly to give them a peda shape. You can also use molds to shape the pedas if you prefer.
    • Press a pistachio or almond onto the top of each peda for garnish (optional).
  4. Serve and Store:
    • Once all the pedas are shaped, let them cool completely before serving.
    • You can store Khurchan Pedas in an airtight container at room temperature for up to a week. If you live in a hot climate, it’s best to store them in the refrigerator to prolong their shelf life.
