Bhutte ki Khees


Bhutte ki Khees is a popular dish from the Indian state of Rajasthan, made with grated corn and a few spices. It’s a delicious and comforting dish that can be enjoyed as a side dish or even as a main course. Here’s a detailed recipe for making Bhutte ki Khees:

Ingredients:

  • 2 cups grated corn (fresh or frozen)
  • 1 cup milk
  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon asafoetida (hing)
  • 1 medium-sized onion, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 2 green chilies, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)
  • Salt to taste
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 tablespoon lemon juice

Instructions:

  1. Grate the Corn:
    • If using fresh corn, remove the kernels from the cob. You can use a grater to grate the corn. If using frozen corn, thaw it before using.
  2. Prepare the Base:
    • Heat ghee in a pan over medium heat. Add cumin seeds, mustard seeds, and asafoetida. Let them splutter.
    • Add chopped onions and sauté until they become translucent.
  3. Add Aromatics:
    • Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
  4. Spice it Up:
    • Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
  5. Cook the Corn:
    • Add the grated corn to the pan and mix well with the spices. Cook for 5-7 minutes, stirring occasionally.
  6. Add Milk:
    • Pour in the milk and continue cooking on low-medium heat. Stir frequently to avoid sticking to the bottom. Cook until the mixture thickens, and the corn is cooked through.
  7. Finish with Fresh Ingredients:
    • Add chopped coriander leaves and lemon juice. Mix well.
  8. Serve:
    • Bhutte ki Khees is ready to be served. Garnish with extra coriander leaves and serve hot.
  9. Optional Tadka (Tempering):
    • You can enhance the flavor by doing a tadka. In a small pan, heat a tablespoon of ghee. Add a pinch of asafoetida, cumin seeds, and mustard seeds. Once they splutter, pour this tempering over the prepared Bhutte ki Khees.
