Bedmi Puri with Aloo ki sabzi

Bedmi Puri is a popular North Indian dish, especially in states like Uttar Pradesh and Delhi. It’s a deep-fried bread made with a combination of urad dal (black gram) and wheat flour, seasoned with spices. The puris are often served with aloo sabzi (potato curry) or spicy mango pickle.

Here’s a detailed recipe for Bedmi Puri:

Ingredients:

For the Bedmi Puri Dough:

  • 1 cup whole wheat flour
  • 1/4 cup urad dal (black gram), soaked for 4-5 hours
  • 1 green chili, chopped
  • 1/2-inch piece of ginger, grated
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Water for kneading
  • Oil for deep frying

For the Aloo Sabzi (Potato Curry):

  • 3-4 medium-sized potatoes, boiled and mashed
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 green chili, chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • A pinch of asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnishing
  • 2 tablespoons oil for cooking

Instructions:

For the Bedmi Puri Dough:

  1. Rinse the soaked urad dal and grind it to a smooth paste using very little water.
  2. In a mixing bowl, combine the whole wheat flour, urad dal paste, chopped green chili, grated ginger, fennel seeds, cumin seeds, asafoetida, and salt.
  3. Gradually add water and knead the mixture into a smooth, soft dough.
  4. Cover the dough with a damp cloth and let it rest for 20-30 minutes.

For the Aloo Sabzi (Potato Curry):

  1. Heat oil in a pan, add cumin seeds, mustard seeds, and asafoetida. Let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add chopped tomatoes and cook until they are soft and oil separates.
  4. Add green chili, turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  5. Add the boiled and mashed potatoes. Mix everything together and let it cook for 5-7 minutes.
  6. Garnish with fresh coriander leaves and set aside.

For Making Bedmi Puri:

  1. Divide the rested dough into small lemon-sized balls.
  2. Heat oil in a deep frying pan over medium heat.
  3. Take each ball of dough and roll it out into a small circle (puris).
  4. Carefully slide the puri into the hot oil and press it gently with a spatula. This helps the puri to puff up.
  5. Fry the puris until they are golden brown and puffed up. Make sure to fry them on both sides.
  6. Remove the puris from the oil and place them on paper towels to drain excess oil.

Serve the hot and crispy Bedmi Puri with the prepared Aloo Sabzi or your favorite side dish.
