Garlic Chilli Cheese Paratha

Here’s a detailed recipe for Garlic Cheese Chilli Paratha, a delicious and flavorful Indian flatbread stuffed with garlic, cheese, and green chilies:

Ingredients:

For the dough:

  • 2 cups whole wheat flour (atta)
  • Water (for kneading)
  • Salt (to taste)
  • Oil (for cooking)

For the stuffing:

  • 1 cup grated cheese (cheddar, mozzarella, or any melting cheese of your choice)
  • 5-6 cloves of garlic, finely minced or grated
  • 2-3 green chilies, finely chopped (adjust to taste)
  • Chopped fresh coriander leaves (optional)
  • Salt (if needed, considering cheese’s saltiness)

Instructions:

Prepare the Dough:

  1. In a mixing bowl, take whole wheat flour and add a pinch of salt. Slowly add water and knead into a soft and pliable dough. Coat the dough with a little oil, cover it with a damp cloth, and let it rest for about 15-20 minutes.

Prepare the Stuffing:

  1. In another bowl, mix together the grated cheese, minced garlic, chopped green chilies, and chopped coriander leaves (if using). Ensure the mixture is well combined. Taste and adjust for seasoning if needed.

Assemble the Parathas:

  1. Take a portion of the dough and roll it into a ball. Flatten it slightly and dust it with flour.
  2. Roll out the dough ball into a small circle (about 5-6 inches in diameter) on a floured surface.
  3. Place a generous amount of the cheese-garlic-chili mixture in the center of the rolled-out dough.
  4. Bring the edges of the dough together to cover the stuffing completely and form a ball again. Press it gently.
  5. Flatten this ball and dust it with flour. Carefully roll it out into a larger circle, about 7-8 inches in diameter. Be gentle to avoid the stuffing from coming out.

Cook the Paratha:

  1. Heat a tawa (griddle) or a non-stick skillet over medium-high heat.
  2. Place the rolled paratha on the hot tawa. Cook for a minute until you see bubbles forming on the surface.
  3. Flip the paratha using a spatula. Spread a little oil or ghee on the cooked side.
  4. Flip it again and spread oil on the other side. Press the edges gently with a spatula to ensure even cooking and browning.
  5. Cook until both sides are golden brown and crispy, and the cheese inside has melted.
  6. Remove the paratha from the tawa and repeat the process with the remaining dough and stuffing.

Serve Hot:

  1. Serve the Garlic Cheese Chilli Paratha hot off the griddle, accompanied by yogurt, pickle, or any desired chutney.

Enjoy these delicious, cheesy, and flavorful parathas as a meal or snack! Adjust the spiciness by altering the amount of green chilies as per your preference.
