Dry Fruit Gond Panjeeri

Gond Panjeeri is a traditional Indian sweet made with edible gum (gond), whole wheat flour, ghee (clarified butter), and various nuts and spices. It is often prepared during the winter months as it is believed to provide warmth and energy. God Panjeeri is considered highly nutritious, even post pregnancy the new mother is given on a regular basis so that she can recover. Here’s a basic recipe for making Dry Fruit Gond Panjeeri:

Ingredients:

  1. 1/2 cup Edible Gum (Gond)
  2. 1 cup Whole Wheat Flour
  3. 1/2 cup Ghee (Clarified Butter)
  4. 1/2 cup Sugar (adjust to taste)
  5. Chopped Almonds, Cashews, and Pistachios as per your liking
  6. 1/4 cup Desiccated Coconut (optional)
  7. 1/2 teaspoon Cardamom Powder
  8. 1/4 teaspoon Nutmeg Powder (optional)
  9. 2-3 tablespoons Raisins
  10. 1/4 teaspoon Dried Ginger Powder (optional)

Instructions:

  1. Heat a heavy-bottomed pan and add the edible gum (gond). Roast it on low heat until it puffs up and turns light brown. You may need to break it into smaller pieces while roasting. Remove the roasted gond and set it aside.
  2. In the same pan, add ghee and let it melt. Once the ghee is hot, add whole wheat flour and roast it on low to medium heat. Keep stirring continuously to avoid burning. Roast until the flour turns light golden brown and gives off a nutty aroma.
  3. Add the roasted gond back into the pan and continue to roast it with the flour for a few minutes. Make sure the gond and flour are well mixed.
  4. Add the chopped nuts, desiccated coconut, and raisins to the mixture and continue to roast for a few more minutes until everything is well combined and lightly roasted.
  5. Add sugar, cardamom powder, nutmeg powder, and dried ginger powder to the pan. Mix everything well and cook for a few more minutes until the sugar melts and combines with the other ingredients.
  6. Turn off the heat and let the mixture cool slightly. It will harden as it cools.
  7. Once it’s cool enough to handle, shape the mixture into small laddoos or ladoos while it’s still warm. You can apply a little ghee to your hands to prevent sticking.
  8. Allow the Gond Panjeeri ladoos to cool completely, and then store them in an airtight container.
