Atta Halwa (Kadah Prashad)

Atta halwa, also known as wheat flour halwa or gehu ka halwa, is a delicious Indian dessert made from whole wheat flour. In North India specially in Punjabi Culture “Atta Halwa” better known as “Kadah Prashad” is considered as The Holy offering to God or the Gurus. So let’s start our Blog’s first post with Kadah prasad recipe. It’s a simple yet delightful treat that can be prepared with just a few ingredients. Here’s a basic recipe for making atta halwa:

Ingredients:

1 cup whole wheat flour (atta)

1/2 cup ghee (clarified butter)

1 cup sugar 2 cups water

1/4 teaspoon cardamom powder

A handful of chopped nuts (almonds, cashews, and pistachios) A pinch of saffron strands (optional, for color and flavor)

Instructions:

  1. Heat a heavy-bottomed pan or kadai and add the ghee to it. Allow the ghee to melt over low-medium heat.
  2. Once the ghee is melted, add the whole wheat flour (atta) to the pan. Stir continuously and roast the flour over low to medium heat until it turns golden brown. This step is crucial to achieving a rich, nutty flavor. It may take about 10-15 minutes, so be patient and keep stirring to avoid burning.
  3. In a separate pan, heat the water until it’s warm. You can also add a pinch of saffron strands to the warm water to infuse some color and flavor, if desired.
  4. When the wheat flour is roasted to a light golden brown color, add the warm water to it slowly, while continuously stirring. Be careful, as this can create some steam and bubbling.
  5. Continue to stir the mixture to avoid lumps. The wheat flour will absorb the water and start thickening. Make sure there are no lumps, and the mixture is smooth.
  6. Add the sugar and cardamom powder to the pan, and keep stirring. The sugar will melt and combine with the wheat flour mixture.
  7. Keep stirring and cooking the halwa until it thickens and starts leaving the sides of the pan. It should have a smooth, glossy texture.
  8. In a separate small pan, roast the chopped nuts in a little ghee until they turn golden brown.
  9. Once the atta halwa reaches the desired consistency, turn off the heat. Garnish it with the roasted nuts and mix them in.
  10. Your atta halwa is ready to serve. You can enjoy it warm or at room temperature.
