Ingredients:

For Marination:

  • 500 grams boneless chicken, cut into bite-sized pieces
  • 1 cup thick yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon garam masala
  • Salt to taste
  • 2 tablespoons lemon juice

For Kadhai Chicken:

  • 2 tablespoons oil
  • 2 large onions, finely sliced
  • 2 tomatoes, finely chopped
  • 1 onion, cube cut
  • 1 green bell pepper, cube cut
  • 1 red bell pepper, cube cut
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Marination:
    • In a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and lemon juice.
    • Add the chicken pieces to the marinade, ensuring they are well-coated.
    • Cover the bowl and let the chicken marinate for at least 2-3 hours, or overnight in the refrigerator for the best results.
  2. Cooking:
    • Heat oil in a Kadhai over medium heat.
    • Add cumin seeds and let them splutter.
    • Add finely sliced onions and sauté until golden brown.
    • Add ginger-garlic paste and sauté until the raw smell disappears.
    • Add chopped tomatoes and cook until they are soft and the oil starts separating.
  3. Spice Mix:
    • Add coriander powder, cumin powder, red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes.
  4. Cooking Chicken:
    • Add marinated chicken pieces to the Kadhai. Cook on medium-high heat until the chicken is browned and cooked through.
    • Stir occasionally to ensure even cooking.
  5. Vegetables:
    • Add cube cut bell peppers, cubed onions and cook for an additional 2-3 minutes until they are slightly tender but still have a crunch.
  6. Garnish:
    • Garnish with fresh coriander leaves.
  7. Serve:
    • Serve hot Kadhai Chicken with naan, roti, or steamed rice.
