Masala Baati


Masala Baati is a savory and flavorful variation of the traditional Rajasthani dish, Baati. Baati is a dense, wheat-based bread typically baked in a charcoal or wood-fired oven, then served with dal (lentil curry) and ghee (clarified butter). Masala Baati takes this dish to the next level by incorporating a mixture of spices and herbs into the dough before baking. This imparts a rich, aromatic flavor to the baati, enhancing its taste and making it even more satisfying. Masala Baati is often enjoyed as a hearty and wholesome meal, perfect for festive occasions or as a comforting dish on a cold day.

Here’s a detailed recipe to make Masala Baati:

Ingredients:

For Baati:

  • 2 cups whole wheat flour
  • 1/4 cup semolina (sooji)
  • 1/4 cup gram flour (besan)
  • 1/4 cup melted ghee or clarified butter
  • 1 teaspoon carom seeds (ajwain)
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon baking powder
  • Salt to taste
  • Water, as needed for kneading
  • Ghee for brushing

For Filling (optional):

  • 1/2 cup roasted gram flour (sattu)
  • 2 tablespoons chopped coriander leaves
  • 2 tablespoons chopped mint leaves
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons melted ghee

Instructions:

  1. Prepare Baati Dough:
    • In a mixing bowl, combine whole wheat flour, semolina, gram flour, carom seeds, cumin seeds, red chili powder, turmeric powder, coriander powder, baking powder, salt, and melted ghee.
    • Mix the ingredients well until the mixture resembles breadcrumbs.
    • Gradually add water and knead the mixture into a stiff dough. Let it rest for 15-20 minutes, covered with a damp cloth.
  2. Prepare Filling (if using):
    • In a separate bowl, mix roasted gram flour (sattu), chopped coriander leaves, chopped mint leaves, red chili powder, garam masala, salt, and melted ghee to form a crumbly mixture.
  3. Make Baati:
    • Preheat the oven to 350°F (180°C) or prepare a charcoal grill/oven for cooking over an open flame.
    • Divide the dough into equal-sized portions and shape them into round balls.
    • If using the filling, flatten each ball and add a spoonful of the filling in the center. Close and reshape the balls.
    • Place the baatis on a baking tray lined with parchment paper or directly on the grill rack.
  4. Cook Baati:
    • Bake the baatis in the preheated oven for about 30-35 minutes until they turn golden brown and are cooked through. If cooking over an open flame, place the baatis on the grill and rotate occasionally until they are evenly cooked and golden.
  5. Serve:
    • Once cooked, remove the baatis from the oven/grill and immediately brush them with ghee for added flavor.
    • Serve hot Masala Baati with dal (lentil curry), chutney, or any side dish of your choice.
