Raagi Aur Gur Ke Laddoo


Raagi and Gur Ke Laddoo, also known as Finger Millet and Jaggery Laddoo, is a traditional Indian sweet made from ragi flour (finger millet flour) and gur (jaggery). It’s a healthy and nutritious snack, rich in iron, calcium, and other essential nutrients. Here’s a basic recipe to make Raagi and Gur Ke Laddoo:

Ingredients:

  • 1 cup ragi flour (finger millet flour)
  • 1 cup grated jaggery (adjust according to taste)
  • 1/4 cup ghee (clarified butter)
  • 1/4 cup chopped nuts (almonds, cashews, pistachios)
  • 1/4 teaspoon cardamom powder (optional)

Instructions:

  1. Roasting the flour: Heat a pan on low flame and dry roast the ragi flour until it turns slightly brown and emits a nutty aroma. Keep stirring continuously to avoid burning. This process takes around 5-7 minutes. Once done, transfer the roasted flour to a plate and let it cool down completely.
  2. Preparation of jaggery syrup: In the same pan, melt the jaggery with a little water to make a syrup. Keep stirring until the jaggery melts completely and forms a smooth syrup. Filter it to remove any impurities.
  3. Mixing: Once the jaggery syrup is ready, add the roasted ragi flour to it and mix well. Also, add chopped nuts and cardamom powder if using. Keep stirring until everything is well combined.
  4. Adding ghee: Add ghee gradually to the mixture and mix well until it forms a dough-like consistency. The ghee helps in binding the laddoos together.
  5. Shaping laddoos: Take small portions of the mixture and shape them into round laddoos by rolling them between your palms. Repeat this process until all the mixture is used up.
  6. Cooling and storing: Let the laddoos cool down completely before storing them in an airtight container. They can be stored at room temperature for up to a week.
