Ingredients:
For the sauce:
- 2 tablespoons oil
- 1 onion, finely chopped
- 2-3 garlic cloves, minced
- 1-inch ginger, minced
- 2 tomatoes, chopped
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup mixed vegetables (like carrots, peas, cauliflower)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon paprika or Kashmiri red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves for garnish
For the marinade:
- 2 cups mixed vegetables, cut into chunks (like bell peppers, cauliflower, carrots, green beans)
- 1 tablespoon oil
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- Salt to taste
Instructions:
- Marinate the vegetables:
- In a bowl, mix the vegetables with oil, cumin powder, coriander powder, red chili powder, and salt. Let it sit for about 15-20 minutes.
- Prepare the sauce:
- Heat oil in a pan. Add cumin seeds and let them crackle.
- Add chopped onions, garlic, and ginger. Sauté until onions turn translucent.
- Put in the tomatoes and cook until they soften.
- Add turmeric, coriander powder, garam masala, paprika or chili powder, and salt. Mix well and cook for a couple of minutes.
- Add all the sliced bell peppers and mixed vegetables. Cook for 7-10 minutes until the vegetables are tender but still crisp.
- Cook the marinated vegetables:
- In a separate pan, heat oil and add the marinated vegetables. Stir-fry them until they are slightly cooked but still crunchy.
- Combine everything:
- Add the cooked marinated vegetables into the sauce. Mix gently.
- Cook for a few more minutes until the flavors blend well.
- Garnish with fresh coriander leaves.
