Veg Jalfrezi (Mixed veg.)

Veg Jalfrezi is a vibrant and aromatic Indian dish featuring a colorful assortment of fresh vegetables stir-fried with a medley of spices and a tangy tomato-based sauce. Here’s a simple recipe of Veg. Jalfrezi commonly known as Mixed veg.

Ingredients:

For the sauce:

  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 2-3 garlic cloves, minced
  • 1-inch ginger, minced
  • 2 tomatoes, chopped
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup mixed vegetables (like carrots, peas, cauliflower)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon paprika or Kashmiri red chili powder (adjust to taste)
  • Salt to taste
  • Fresh coriander leaves for garnish

For the marinade:

  • 2 cups mixed vegetables, cut into chunks (like bell peppers, cauliflower, carrots, green beans)
  • 1 tablespoon oil
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • Salt to taste

Instructions:

  1. Marinate the vegetables:
    • In a bowl, mix the vegetables with oil, cumin powder, coriander powder, red chili powder, and salt. Let it sit for about 15-20 minutes.
  2. Prepare the sauce:
    • Heat oil in a pan. Add cumin seeds and let them crackle.
    • Add chopped onions, garlic, and ginger. Sauté until onions turn translucent.
    • Put in the tomatoes and cook until they soften.
    • Add turmeric, coriander powder, garam masala, paprika or chili powder, and salt. Mix well and cook for a couple of minutes.
    • Add all the sliced bell peppers and mixed vegetables. Cook for 7-10 minutes until the vegetables are tender but still crisp.
  3. Cook the marinated vegetables:
    • In a separate pan, heat oil and add the marinated vegetables. Stir-fry them until they are slightly cooked but still crunchy.
  4. Combine everything:
    • Add the cooked marinated vegetables into the sauce. Mix gently.
    • Cook for a few more minutes until the flavors blend well.
    • Garnish with fresh coriander leaves.
  5. Serve:
    • Serve hot with rice or naan bread.
