Wheat Rava Payasam

Wheat rava payasam is a delicious South Indian dessert made with broken wheat (also known as wheat rava or dalia), milk, sugar, and flavored with cardamom and garnished with nuts. Here’s a detailed recipe for you:

Ingredients:

  • 1 cup wheat rava (broken wheat or dalia)
  • 1 liter full-fat milk
  • 1 cup sugar (adjust to taste)
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons ghee (clarified butter)
  • 10-12 cashews
  • 10-12 raisins
  • A pinch of saffron strands (optional)
  • A few strands of chopped pistachios and almonds for garnish

Instructions:

  1. Roasting Wheat Rava:
    • Heat a heavy-bottomed pan on medium heat.
    • Add the wheat rava and dry roast it until it turns golden brown and you get a nutty aroma. Keep stirring to avoid burning. This step takes about 5-7 minutes.
  2. Boiling Milk:
    • In a separate pan, bring the milk to a boil. Once it boils, reduce the heat to low and let it simmer.
  3. Cooking Wheat Rava:
    • Add the roasted wheat rava to the simmering milk. Stir continuously to avoid lumps.
    • Cook the wheat rava in milk until it becomes soft and the mixture thickens. This may take about 15-20 minutes.
  4. Adding Sugar:
    • Add sugar to the mixture and stir well until the sugar dissolves completely. Adjust the sweetness according to your taste.
  5. Adding Cardamom Powder:
    • Add cardamom powder to the mixture for flavor. You can crush cardamom seeds to make the powder.
  6. Tempering Nuts:
    • In a small pan, heat ghee. Add cashews and raisins and sauté until the cashews turn golden brown and raisins puff up. Be careful not to burn them.
  7. Adding Nuts to Payasam:
    • Add the tempered cashews and raisins to the wheat rava payasam. Also, add saffron strands if using.
  8. Garnishing:
    • Garnish the payasam with chopped pistachios and almonds.
  9. Final Mix:
    • Mix everything well and let it simmer for another 5-7 minutes until the flavors meld.
  10. Serve:
    • Once the wheat rava payasam reaches your desired consistency, turn off the heat. Let it cool for a bit before serving.
  11. Serve Warm or Chilled:
    • You can serve wheat rava payasam warm or chilled, depending on your preference.

Enjoy your delicious wheat rava payasam!
