Palak Methi ke Pakore

Palak Methi ke Pakore are fritters made with spinach (palak) and fenugreek leaves (methi), mixed with gram flour and spices. Here’s a recipe for these flavorful and crispy pakoras:

Ingredients:

  • 1 cup spinach leaves, chopped
  • 1 cup fenugreek leaves, chopped
  • 1 cup gram flour (besan)
  • 2 tablespoons rice flour (for extra crispiness, optional)
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon coriander seeds.
  • A pinch of asafoetida (hing)
  • 1 teaspoon cumin seeds
  • 2-3 green chilies, finely chopped (optional)
  • 1 inch ginger, grated
  • 2 tablespoons chopped coriander leaves
  • Oil for deep frying
  • Salt to taste
  • Water, as needed

Instructions:

  1. Prepare Spinach and Fenugreek Leaves:
    • Wash the spinach and fenugreek leaves thoroughly. Chop them finely and set them aside.
  2. Make the Pakora Batter:
    • In a mixing bowl, combine gram flour, rice flour (if using), red chili powder, turmeric powder, coriander powder, coriander seeds, asafoetida (hing), cumin seeds, chopped green chilies (if using), grated ginger, chopped coriander leaves, and salt.
    • Gradually add water to the dry ingredients to make a thick batter.
    • Add the chopped spinach and fenugreek leaves to the batter. Mix well.
  3. Heat Oil for Frying:
    • Heat oil in a deep frying pan or kadai over medium heat.
  4. Fry the Pakoras:
    • Once the oil is hot, carefully drop spoonfuls of the batter-coated greens into the oil.
    • Fry the pakoras until they turn golden brown and crispy on all sides. Fry in batches for even cooking.
  5. Drain and Serve:
    • Use a slotted spoon to remove the fried palak methi pakoras and place them on a paper towel to drain excess oil.
  6. Serve Hot:
    • Serve the crispy and hot palak methi ke pakore with mint chutney, tamarind chutney, or tomato ketchup.
