Vegetable Raita

Vegetable Raita is a refreshing Indian yogurt-based side dish that’s flavored with various vegetables and spices. Here’s a detailed recipe for making Vegetable Raita:

Ingredients:

  • 2 cups plain yogurt (curd)
  • 1 small cucumber, finely chopped or grated
  • 1 small carrot, finely grated
  • 1 small tomato, finely chopped (seeds removed)
  • 1/2 red onion, finely chopped (optional)
  • 2-3 tablespoons chopped fresh coriander leaves (cilantro)
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon chaat masala (optional)
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • A pinch of asafoetida (hing) – optional
  • 1 tablespoon oil (for tempering, optional)
  • 1/2 teaspoon mustard seeds (for tempering, optional)
  • 5-6 curry leaves (for tempering, optional)

Instructions:

  1. Prepare the Vegetables:
    • Finely chop or grate the cucumber and carrot. Remove excess moisture from the cucumber by squeezing it lightly. Similarly, remove excess water from the grated carrot using a paper towel.
    • Finely chop the tomato and onion if using.
  2. Prepare the Yogurt Base:
    • Take plain yogurt in a mixing bowl and whisk it until smooth. Add a little water if the yogurt is too thick.
  3. Mixing the Vegetables:
    • Add the chopped or grated cucumber, carrot, tomato, onion (if using), and chopped coriander leaves to the yogurt.
    • Mix them well until all the vegetables are evenly distributed in the yogurt.
  4. Seasoning:
    • Add roasted cumin powder, chaat masala (if using), red chili powder, and salt to taste. Mix everything thoroughly.
  5. Optional Tempering (Tadka):
    • In a small pan, heat oil over medium heat. Add mustard seeds and let them splutter.
    • Add curry leaves and a pinch of asafoetida (hing) if desired. Stir for a few seconds until fragrant.
    • Pour this tempering over the prepared raita and mix gently.
  6. Chill and Serve:
    • Refrigerate the raita for at least 30 minutes before serving to allow the flavors to meld together.
    • Serve chilled as a side dish with biryani, pulao, paratha, or any spicy main course.
