Chicken Fried Rice

Chicken fried rice is a flavorful Indo Chinese fusion dish featuring stir-fried rice tossed with tender chicken, aromatic spices like ginger, garlic, and green chilies, along with colorful veggies like bell peppers and onions. It’s seasoned with soy sauce, vinegar, and optionally chili sauce for a delicious blend of Indian and Asian flavors.

Here’s a simple Indian-style chicken fried rice recipe:

Ingredients:

  • 2 cups of cooked and cooled rice (preferably basmati)
  • 1 cup boneless chicken, diced
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 2-3 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, finely chopped (adjust according to spice preference)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce (optional)
  • 1 tablespoon vinegar
  • 2 tablespoons oil (preferably sesame or vegetable oil)
  • Salt to taste
  • Pepper to taste
  • Spring onions for garnish (optional)

Instructions:

  1. Heat oil in a wok or a large pan on medium-high heat.
  2. Add diced chicken and stir-fry until it’s cooked through and turns golden brown. Remove the chicken from the pan and set it aside.
  3. In the same pan, add a bit more oil if needed. Add minced garlic, ginger, and green chilies. Sauté for a minute until fragrant.
  4. Add chopped onions and bell peppers. Stir-fry until they are slightly tender but still crisp.
  5. Push the veggies to the side of the pan, creating some space. Pour the beaten eggs into the space and scramble them until they’re cooked.
  6. Once the eggs are cooked, mix them with the vegetables in the pan.
  7. Add the cooked rice to the pan and stir-fry everything together on high heat for a couple of minutes.
  8. Add the cooked chicken back into the pan and mix well with the rice and vegetables.
  9. Pour soy sauce, chili sauce (if using), and vinegar over the mixture. Toss everything together until the sauces are evenly distributed.
  10. Season with salt and pepper according to your taste. Stir-fry for another minute or two.
  11. Once everything is well combined and heated through, turn off the heat.
  12. Garnish with chopped spring onions if desired and serve hot.
