Here’s a basic recipe to make Rogan Josh:

Ingredients:

  • 1 kg lamb, cut into pieces
  • 4 tablespoons oil or ghee
  • 2 onions, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 2 tomatoes, pureed
  • 1 teaspoon cumin seeds
  • 4-5 green cardamom pods
  • 2-3 black cardamom pods
  • 2-inch cinnamon stick
  • 4-5 cloves
  • 1 teaspoon turmeric powder
  • 2 teaspoons Kashmiri red chili powder (adjust to taste)
  • 1 tablespoon ground coriander
  • 1 teaspoon ground fennel seeds
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • Salt to taste
  • 1 cup water
  • Chopped fresh coriander for garnish (optional)

Instructions:

  1. Heat oil or ghee in a heavy-bottomed pan or pressure cooker over medium heat. Add cumin seeds, green cardamom, black cardamom, cinnamon, and cloves. Sauté for a minute until fragrant.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in the ginger-garlic paste and cook for a couple of minutes until the raw smell disappears.
  4. Add the tomato puree and cook until the oil starts to separate from the mixture.
  5. Add turmeric powder, Kashmiri red chili powder, ground coriander, ground fennel seeds, ground ginger, ground cinnamon, and salt. Mix well and cook for a few minutes.
  6. Add the lamb pieces to the spice mixture and stir until they are well coated.
  7. Pour in the water and bring the mixture to a boil. Reduce the heat, cover the pan or pressure cooker, and simmer until the lamb is tender. If using a pressure cooker, cook for about 20-25 minutes after the first whistle.
  8. Check the seasoning and adjust as needed. If the curry is too thin, cook uncovered for a few more minutes to thicken the gravy.
  9. Once done, garnish with fresh coriander (if desired) and serve hot with rice, naan, or roti.
