Akki Roti

Akki Roti is a popular South Indian flatbread made with rice flour. It’s a delicious and nutritious dish that can be served for breakfast or as a snack. Here’s a detailed recipe for making Akki Roti:

Ingredients:

  • 1 cup rice flour
  • 1/2 cup finely chopped onions
  • 1/4 cup grated coconut (optional)
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1 tablespoon finely chopped cilantro (coriander leaves)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon grated ginger
  • Salt to taste
  • Water (approximately 1 to 1.5 cups)
  • Ghee or oil for cooking

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine rice flour, chopped onions, grated coconut, green chilies, cilantro, cumin seeds, grated ginger, and salt.
  2. Add Water:
    • Gradually add water to the mixture. Start with 1 cup and add more as needed.
    • Mix the ingredients well to form a soft, non-sticky dough. The consistency should be such that you can easily spread the dough on a griddle.
  3. Divide the Dough:
    • Divide the dough into equal-sized portions. The size can vary depending on your preference.
  4. Shape the Rotis:
    • Take a portion of the dough and shape it into a ball. Place it on a clean surface or a banana leaf.
    • Use your fingers to flatten and spread the dough into a thin, round roti. You can use a bit of water to help in spreading the dough.
  5. Heat the Griddle:
    • Heat a griddle or a flat pan on medium heat. Once hot, reduce the heat to medium-low.
  6. Cook the Roti:
    • Carefully transfer the shaped roti onto the hot griddle.
    • Cook on one side until small bubbles appear on the surface, and the edges start to lift.
  7. Flip and Cook:
    • Flip the roti and cook the other side. Apply a little ghee or oil on the cooked side.
  8. Cook Until Golden Brown:
    • Continue cooking, flipping, and applying ghee or oil until both sides are golden brown and the roti is cooked through.
  9. Repeat:
    • Repeat the process with the remaining portions of dough.
  10. Serve Hot:
    • Serve Akki Roti hot with coconut chutney, yogurt, or any chutney of your choice.
  11. Optional Toppings:
    • You can also add grated vegetables like carrots or finely chopped spinach to the dough for added flavor and nutrition.

Akki Roti is best enjoyed fresh off the griddle. It’s a versatile dish that can be customized based on your preferences.
