Pathiri

Ingredients:

  • 2 cups rice flour
  • 1 to 1.5 cups water (approximately)
  • Salt to taste
  • Ghee or oil for cooking

Instructions:

1. Prepare the Dough:

  • In a mixing bowl, add the rice flour and salt. Gradually add water while kneading to form a smooth dough. The dough should be soft and pliable but not sticky. Adjust the water as needed.
  • Once the dough is ready, cover it with a damp cloth and let it rest for about 15-20 minutes.

2. Shape the Pathiri:

  • Divide the dough into small lemon-sized balls.
  • Take one ball of dough and flatten it slightly with your palms.
  • Place the flattened dough on a clean, dry surface dusted with rice flour.

3. Roll Out the Pathiri:

  • Using a rolling pin, roll out each ball of dough into thin, round discs. Dust with rice flour as needed to prevent sticking.
  • The pathiri should be thin, about 1-2 mm in thickness.

4. Cook the Pathiri:

  • Heat a tawa (griddle) or a flat skillet over medium heat.
  • Once the tawa is hot, place a rolled-out pathiri on it.
  • Cook for about 1-2 minutes on one side until small bubbles start to appear.
  • Flip the pathiri and cook for another 1-2 minutes until both sides are cooked evenly.
  • Lightly press the edges with a spatula to ensure even cooking.

5. Serve:

  • Once cooked, remove the pathiri from the tawa and place it on a plate.
  • Brush with ghee or oil for added flavor if desired.
  • Serve hot with your choice of curry, chutney, or accompaniment.
