Mutton Rara (keema meat)

Mutton Rara is a tantalizing Indian dish that harmoniously blends minced mutton (Goat Meat) with tender chunks of meat, cooked in a rich, aromatic gravy. This flavorful delicacy boasts a perfect union of spices, creating a textured and indulgent meal that’s both hearty and satisfying. Here’s a recipe to make Mutton Rara:

Ingredients:

For the mutton:

  • 500g mutton (Goat Meat) pieces (curry cut)
  • 250g minced mutton
  • 3 tablespoons mustard oil/ ghee (clarified butter)
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • 1-2 tablespoons lemon juice (optional)

For the ground masala:

  • 1 onion, roughly chopped
  • 2-3 garlic cloves
  • 1-inch ginger piece
  • 1/2 teaspoon fennel seeds
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1-inch cinnamon stick

Instructions:

  1. Prepare the ground masala paste: In a blender, combine the roughly chopped onion, garlic cloves, ginger, fennel seeds, cardamom pods, cloves, and cinnamon stick. Blend into a smooth paste adding a little water if needed. Set aside.
  2. Heat oil/ghee in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add the finely chopped onions and sauté until they turn golden brown.
  4. Stir in the ginger-garlic paste and green chilies. Cook for a couple of minutes until the raw smell disappears.
  5. Add the chopped tomatoes and cook until they soften and the oil starts separating from the mixture.
  6. Mix in the ground masala paste. Cook for a few minutes until the raw smell of the masala disappears and the oil separates.
  7. Add turmeric powder, coriander powder, red chili powder, and salt. Stir well and cook the masala for a couple of minutes.
  8. Add the cubed mutton pieces to the masala. Stir and cook until the mutton pieces change color and are partially cooked.
  9. Add the minced mutton to the pan. Mix it well with the spices and the partially cooked mutton pieces.
  10. Pour in a little water, cover the pan, and simmer on low heat until both the minced and cubed mutton are fully cooked and tender. Adjust the water if needed to achieve the desired gravy consistency.
  11. Once done, sprinkle garam masala and mix gently.
  12. Garnish with fresh coriander leaves and a squeeze of lemon juice if desired.
  13. Serve hot with naan, roti, or steamed rice. Enjoy the delicious Mutton Rara!
