Pyaz Kachori


Pyaz Kachori is a popular Indian snack that originated in Rajasthan. These are deep-fried pastries stuffed with a spicy onion (pyaz) and potato filling. Here’s a recipe to make Pyaz Kachori:

Ingredients for the dough:

  • 2 cups all-purpose flour (maida)
  • 4 tablespoons ghee or oil
  • Water for kneading
  • A pinch of salt

Ingredients for the filling:

  • 1 cups finely chopped onions
  • 2 Large boiled potatoes
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon coriander seeds, crushed
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for frying

Instructions:

  1. Start by preparing the dough. In a mixing bowl, combine the all-purpose flour, ghee or oil, and a pinch of salt. Mix well.
  2. Gradually add water and knead the mixture into a smooth, firm dough. Cover the dough and let it rest for about 15-20 minutes.
  3. Meanwhile, prepare the filling. Heat oil in a pan over medium heat. Add cumin seeds, fennel seeds, and crushed coriander seeds. Let them splutter.
  4. Add finely chopped onion and sauté until they turn translucent, add mashed boiled potatoes..
  5. Add ginger paste, red chili powder, turmeric powder, garam masala, and salt. Mix well and cook the spices for a couple of minutes until the raw aroma disappears. Remove from heat and let the filling cool.
  6. Divide the rested dough into small balls.
  7. Take a dough ball and roll it out into a small circle (approximately 3-4 inches in diameter).
  8. Place a small ball of the cooled onion potato filling in the center of the circle.
  9. Carefully bring the edges of the dough together, enclosing the filling, and seal it properly. Flatten the dough with your palms.
  10. Repeat the process with the remaining dough and filling to make more kachoris.
  11. Heat oil in a deep pan for frying. Once the oil is hot, gently slide in the stuffed kachoris.
  12. Fry the kachoris on medium heat until they turn golden brown and crispy on all sides.
  13. Remove the fried kachoris onto a kitchen towel to drain excess oil.
  14. Serve the Pyaz Kachoris hot with chutney or sauce of your choice.
