Sev Puri

Sev Puri is a popular Indian street food snack made with crispy puris also known as Golgappa (small, round, crispy wheat crackers), topped with a variety of chutneys, vegetables, and sev (crispy chickpea flour noodles).

Here’s a detailed recipe to make Sev Puri at home:

Ingredients:

For the Puris:

  • 30-40 store-bought puris or homemade puris
  • Oil for frying (if making puris at home)

For the Sev Puri Assembly:

  • 2 cups boiled potatoes, peeled and diced
  • 1 cup boiled chickpeas (optional)
  • 1 cup finely chopped onions
  • 1 cup finely chopped tomatoes
  • 1/2 cup finely chopped coriander leaves (cilantro)
  • Green chutney (blend coriander, mint, green chilies, ginger, and lemon juice)
  • Tamarind chutney (blend tamarind, dates, jaggery, cumin, and salt)
  • Chaat masala
  • Red chili powder (optional)
  • Sev (thin chickpea flour noodles)
  • Nylon sev (optional, finer version of sev)

Instructions:

Preparing Puris (if not using store-bought):

  1. Making Puris:
    • Knead a stiff dough using whole wheat flour, a pinch of salt, and water. Rest the dough for 15-20 minutes.
    • Roll out small discs from the dough and fry them in hot oil until they puff up and turn golden brown. Drain excess oil and set aside.

Assembling Sev Puri:

  1. Prepping Toppings:
    • Mix boiled and diced potatoes with some salt, chaat masala, and a pinch of red chili powder (if using).
    • Prepare the mint chutney and tamarind chutney if not already prepared.
  2. Assembling:
    • Arrange the puris on a plate.
    • Make a small hole in the center of each puri.
    • Fill each puri with a spoonful of the prepared potato mixture.
    • Add a few boiled chickpeas on top (if using).
    • Sprinkle chopped onions, tomatoes, and coriander leaves over each puri.
    • Drizzle green chutney and tamarind chutney over the toppings as per your taste preferences.
  3. Finishing Touch:
    • Sprinkle chaat masala and a pinch of red chili powder (if desired) over the assembled puris.
    • Generously top the puris with sev and nylon sev (if using).
  4. Serve Immediately:
    • Serve the Sev Puri immediately, as the puris tend to get soggy if left for too long after assembling.
