Nadru Monje, also known as lotus stem fries or kamal kakdi fries, are a delicious and crunchy snack made from lotus stems. Here’s a simple recipe to make nadru fries at home:
Ingredients:
- 1 medium-sized lotus stem
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- Water as needed
- Oil for deep frying
Instructions:
- Peel the lotus stem and slice it thinly. Rinse the slices under cold water to remove any dirt.
- In a bowl, mix together the all-purpose flour, cornstarch, red chili powder, turmeric powder, garam masala, and salt to taste.
- Gradually add water to the flour mixture, whisking continuously, until you get a smooth batter with a consistency similar to pancake batter.
- Heat oil in a deep frying pan or kadhai over medium-high heat.
- Dip each lotus stem slice into the batter, ensuring it is evenly coated.
- Carefully drop the coated lotus stem slices into the hot oil, a few at a time, and fry until they turn golden brown and crispy. Fry them in batches to avoid overcrowding the pan.
- Once the nadru fries are golden and crisp, remove them from the oil using a slotted spoon and drain them on paper towels to remove excess oil.
- Serve the nadru fries hot with your favorite dipping sauce or chutney.
Enjoy your crispy and flavorful nadru fries as a tasty snack or appetizer!
