Nadru Monje/Kamal Kakdi fries


Nadru Monje, also known as lotus stem fries or kamal kakdi fries, are a delicious and crunchy snack made from lotus stems. Here’s a simple recipe to make nadru fries at home:

Ingredients:

  • 1 medium-sized lotus stem
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Water as needed
  • Oil for deep frying

Instructions:

  1. Peel the lotus stem and slice it thinly. Rinse the slices under cold water to remove any dirt.
  2. In a bowl, mix together the all-purpose flour, cornstarch, red chili powder, turmeric powder, garam masala, and salt to taste.
  3. Gradually add water to the flour mixture, whisking continuously, until you get a smooth batter with a consistency similar to pancake batter.
  4. Heat oil in a deep frying pan or kadhai over medium-high heat.
  5. Dip each lotus stem slice into the batter, ensuring it is evenly coated.
  6. Carefully drop the coated lotus stem slices into the hot oil, a few at a time, and fry until they turn golden brown and crispy. Fry them in batches to avoid overcrowding the pan.
  7. Once the nadru fries are golden and crisp, remove them from the oil using a slotted spoon and drain them on paper towels to remove excess oil.
  8. Serve the nadru fries hot with your favorite dipping sauce or chutney.
