Prawns Pot Rice


Prawn Pot Rice, also known as Prawn Pulao, is a flavorful and aromatic rice dish cooked with prawns and a variety of spices. Here’s a recipe to make Prawn Pot Rice:

Ingredients:

  • 1 cup basmati rice, washed and soaked for 30 minutes
  • 250 grams (about 9 ounces) medium-sized prawns, cleaned and deveined
  • 2 tablespoons oil or ghee
  • 1 onion, thinly sliced
  • 2 tomatoes, chopped
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 2-3 cloves
  • 2-3 green cardamom pods
  • 1-inch cinnamon stick
  • 1 bay leaf
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to spice preference)
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves for garnishing
  • Lemon wedges for serving (optional)

Instructions:

  1. Marinating the Prawns:
    • In a bowl, marinate the cleaned prawns with a pinch of turmeric powder, red chili powder, and salt. Keep it aside while you prepare other ingredients.
  2. Cooking the Rice:
    • Heat oil or ghee in a heavy-bottomed pot or pressure cooker.
    • Add cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaf. Sauté until aromatic.
    • Add thinly sliced onions and sauté until they turn golden brown.
    • Stir in the ginger-garlic paste and cook for a minute until the raw smell disappears.
    • Add chopped tomatoes and green chilies. Cook until tomatoes turn soft and oil starts to separate.
    • Drain the soaked rice and add it to the pot. Mix well to coat the rice with the masala.
    • Add turmeric powder, red chili powder, garam masala powder, and salt. Stir to combine.
    • Pour in 2 cups of water and bring it to a boil.
    • Once the water starts boiling, reduce the heat to low, cover the pot with a lid, and let it cook for about 10-12 minutes or until the rice is almost done.
  3. Adding the Prawns:
    • Once the rice is almost cooked, gently place the marinated prawns on top of the rice.
    • Cover the pot again and let it cook for another 5-7 minutes or until the prawns are cooked through and the rice is fully done.
  4. Garnish and Serve:
    • Once the prawns and rice are cooked, remove the pot from the heat.
    • Garnish with fresh coriander leaves.
    • Serve hot with lemon wedges on the side, if desired.
