Kolkata style Egg Rolls

Kolkata-style egg rolls, are delightful snacks filled with a flavorful assortment of vegetables wrapped in a Egg paratha. Here’s a detailed recipe to make Kolkata style Egg Rolls:

Ingredients:

For the vegetable filling:

  • 1 cup mixed vegetables (such as carrots, bell peppers, cabbage, onions, and beans), cut lengthwise.(julliens)
  • 2-3 tablespoons oil
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust according to spice preference)
  • Salt, to taste
  • Fresh coriander leaves, chopped
  • Lemon juice (optional)

For the rolls:

  • Whole wheat dough
  • 2 Eggs
  • Tomato ketchup or mint chutney (optional)
  • Sliced onions (optional)
  • Chopped green chilies (optional)
  • Lemon wedges (optional)

Instructions:

  1. Prepare the Vegetable Filling:
    • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
    • Add ginger-garlic paste and sauté for a minute until the raw aroma fades.
    • Add the mixed vegetables and sauté for 3-4 minutes until they are slightly tender yet retain their crunch.
    • Sprinkle turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a few more minutes.
    • Add chopped coriander leaves and a dash of lemon juice (if using). Remove from heat and set aside.
  2. Prepare the Roti/Paratha:
    • Place a non-stick skillet or tawa on medium-high heat.
    • In a separate bowl, beat the eggs well with some salt and red chillies.
    • Take one rolled-out dough circle and place it on the skillet. Cook it for about a minute until you see small bubbles forming on the surface.
    • Spread a teaspoon of oil or ghee on the surface of the partially cooked side of the paratha.
    • Flip the paratha over. Reduce the heat to medium-low.
    • Pour a portion of the egg mixture onto the paratha and spread it evenly, leaving some space around the edges.
    • Let it cook for a few seconds until the egg starts to set.
  3. Assemble the Kolkata style Egg Roll:
    • Place the egg paratha on a clean surface.
    • Spread a layer of tomato ketchup or mint chutney (if using) over the center of the paratha.
    • Spoon a portion of the prepared vegetable filling onto the center of the paratha.
    • Optionally, add sliced onions and chopped green chilies for extra flavor.
  4. Rolling the Kolkata style Egg Roll:
    • Fold the bottom edge of the paratha over the filling.
    • Fold in the sides to cover the filling partially.
    • Roll the paratha tightly from bottom to top, sealing the filling within the layers.
