Ragi Sangati with Natukodi Pulusu


Ragi Sangati with Natukodi Pulusu is a traditional and nutritious meal from the Telugu cuisine of Andhra Pradesh, India. Ragi Sangati is a dish made with finger millet (ragi) and rice, served with Natukodi Pulusu, which is a spicy chicken curry prepared with country chicken. Here’s how you can make both dishes:

Ragi Sangati:

Ingredients:

  • 1 cup finger millet (ragi)
  • 1 cup rice
  • Water, as needed
  • Salt to taste

Instructions:

  1. Preparation:
    • Rinse the finger millet and rice together under running water until the water runs clear.
    • Soak the finger millet and rice together in water for about 4-6 hours or overnight.
  2. Cooking:
    • Drain the soaked finger millet and rice.
    • In a large pot, add the soaked finger millet and rice along with fresh water.
    • Cook them together until they become soft and well cooked, similar to how you cook rice. You may need to add more water as needed.
    • Once cooked, mash the finger millet and rice together to form a soft dough-like consistency.
    • Add salt to taste and mix well.
  3. Serving:
    • Shape the cooked ragi rice mixture into balls or serve it as a mound on a plate.
    • Ragi Sangati is now ready to be served.

Natukodi Pulusu (Country Chicken Curry):

Ingredients:

  • 500g country chicken (natukodi), cleaned and cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 sprig curry leaves
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Cooking:
    • Heat oil in a pressure cooker or a heavy-bottomed pot.
    • Add mustard seeds and let them splutter.
    • Add cumin seeds and curry leaves. Sauté for a few seconds.
    • Add chopped onions and sauté until they turn golden brown.
    • Add ginger-garlic paste and slit green chilies. Sauté for a couple of minutes until the raw smell disappears.
    • Add chopped tomatoes and cook until they turn soft and mushy.
    • Now, add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
    • Add the cleaned and cut country chicken pieces to the pot. Stir well to coat the chicken pieces with the masala.
    • Add water as needed to cover the chicken pieces.
    • Close the pressure cooker or pot with a lid and cook until the chicken is tender and cooked through. If using a pressure cooker, cook for about 4-5 whistles or as per your cooker’s instructions.
    • Once done, allow the pressure to release naturally before opening the lid.
  2. Serving:
    • Garnish the Natukodi Pulusu with freshly chopped coriander leaves.
    • Serve the hot Natukodi Pulusu with Ragi Sangati.
