Girda, also known as Girda Roti, is a type of traditional bread popular in Kashmiri cuisine. It’s a round, slightly leavened bread with a chewy texture and is typically enjoyed with various Kashmiri dishes like Rogan Josh or Kabargah. Here’s a simple recipe to make Girda at home:
Ingredients:
- 2 cups whole wheat flour (atta)
- 1 teaspoon active dry yeast
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- Warm water, as needed
- Ghee or butter, for brushing (optional)
Instructions:
- In a small bowl, dissolve the sugar in a little warm water. Sprinkle the yeast over the water and let it sit for about 5-10 minutes, or until foamy.
- In a large mixing bowl, combine the whole wheat flour and salt. Make a well in the center and pour in the activated yeast mixture.
- Gradually add warm water to the flour mixture, a little at a time, and knead until you have a soft and slightly sticky dough. You may not need to use all the water, so add it gradually.
- Once the dough comes together, transfer it to a clean, lightly floured surface and knead it for about 5-7 minutes, or until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
- Preheat your oven to 425°F (220°C). If you’re using a tandoor or clay oven, preheat it accordingly.
- Punch down the risen dough and divide it into equal-sized portions. Shape each portion into a smooth ball and place them on a baking sheet lined with parchment paper, leaving some space between each ball.
- Flatten each ball slightly to form a disc shape, about 1/2 inch thick.
- Bake the Girda in the preheated oven for 10-15 minutes, or until they are golden brown and cooked through. If you’re using a tandoor or clay oven, cook the Girda on the walls of the oven until they are puffed up and cooked.
- Once done, remove the Girda from the oven and brush them with ghee or butter, if desired.
- Serve the Girda warm with your favorite Kashmiri dishes or enjoy them on their own.
