Here’s a simple recipe for Mutton Pepper Fry:
Ingredients:
- 500 grams mutton (goat meat), cut into bite-sized pieces
- 2 tablespoons oil (preferably coconut oil)
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons freshly ground black pepper
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions:
- Heat oil in a pressure cooker or a heavy-bottomed pan over medium heat.
- Add cumin seeds and fennel seeds to the hot oil and sauté for a few seconds until they start to sizzle.
- Add chopped onions and green chilies to the pan and sauté until the onions turn golden brown.
- Stir in the ginger-garlic paste and cook for another couple of minutes until the raw smell disappears.
- Add the chopped tomatoes to the pan and cook until they turn mushy and the oil starts to separate from the mixture.
- Now, add the mutton pieces to the pan along with turmeric powder, freshly ground black pepper, and salt to taste. Mix well to coat the mutton pieces evenly with the spices.
- Cook the mutton for a few minutes until it starts to brown slightly.
- If using a pressure cooker, add about 1/2 to 1 cup of water, depending on the desired consistency of the gravy, and pressure cook the mutton until it is tender. If using a pan, add water as needed, cover the pan, and simmer until the mutton is cooked and tender, stirring occasionally.
- Once the mutton is cooked, check for seasoning and adjust salt and pepper according to taste.
- Garnish the Mutton Pepper Fry with fresh cilantro leaves and serve hot with steamed rice, roti, or paratha.
